Keller’s gastronomic Mecca in the heart of Napa Valley

It may be 20 years since Thomas Keller first took over The French Laundry but it remains a culinary institution in the US and beyond. Some of America’s top chefs have trained here under the tutelage of the iconic chef, whose refined French food continues to attract gastronomic pilgrims from around the world. Located in the sleepy village of Yountville in the heart of Napa Valley’s winelands, the restaurant is housed in a century-old stone cottage surrounded by a country garden complete with roses and perennials. It doesn’t get much more romantic than this.

The brigade at The French Laundry, led by Keller and chef de cuisine David Breeden, prepares two nine-course tasting menus (one is vegetarian) each day. Drawing on the highest-quality ingredients from around the US as well as produce from its own garden, no single ingredient is repeated twice. Keller classics such as salmon cornets (tiny cones of salmon tartare topped with crème fraîche), sweet butter-poached Maine lobster, and coffee and doughnuts have stood the test of time, but new creations complement these signatures as menus continue to evolve. Each dish is in perfect harmony and balance and there’s never too much of anything to tire of the flavours.

Keller’s empire now stretches across the States, including the equally admire Per Se in New York, of course. But Yountville – where he also owns two other restaurants in Bouchon and Ad Hoc as well as the flagship Bouchon bakery – remains very much his spiritual home.
